Grand Cayman....
Dive or snorkel with the stingrays in Grand Cayman - absolute must.
Rum Point is really pretty.
Turtle Farm - so-so, Botanical Gardens - so-so
Don't take a "tour" to Seven Mile Beach in Cayman - what a rip-off, you can walk, take the bus or get yourself a taxi outside of the cruiseship area. And don't go to the "Cruiseship Beach" you can sit anywhere on the beach where it is less crowded, even "Public Beach" is less crowded.
References :
Lived in Cayman for 12 years....

I went on a Carnival cruise in '99 that went to New Orleans, Cozumel and Grand Cayman. While I really didn't enjoy the cruise ship that much for a variety of reasons, the ports were great. Grand Cayman and Cozumel are gorgeous. Definately do the swimming with the stingrays in Grand Cay...
References :
Remember that at each stop the ship only stays max one day, first stop would be Cozumel, second Grand Cayman and third Jamaica.

Call Carnival Cruises and ask what activities or side tours can you take at each stop, and they will send you all info including prices. The only thing the ship does for you at those three ports at no extra cost is the transfer by motor boat to the shore and back to the ship, all else is an additional cost and they have side tours to offer.
